Introduction to Old Fashioned Sourdough
6 lecturesHello! So glad you could join me in this course on "Old Fashioned Sourdough Quick Breads." Any downloadable materials will be available to the right of the lecture and also a link can be seen under the lecture. The downloadable materials are also available in a lecture at the end of the course for your convenience.
You'll need a sourdough starter to follow this course. It's easy and fun, but it takes about two weeks, so get started right away!
In this lecture you will be able to download a 32 page e-book, "Make Your Own Sourdough Starter." It will show you not only how to make a starter but how to care for it and store it as well. It will also show you how to make different types of motherdough, which is a type of pre-ferment.
Let's talk about the past and how people used to use sourdough for baking breads.

Sourdough Cornbread - So Delicious!

Here's the formula for German Puff Pancakes - Also in printout format.
Mix a one pan (skillet) puffy egg pancake.
Pour the batter in a hot skillet and bake it to a golden puff.
It's just one pancake, but it takes up the whole skillet!
Overnight Jacks are so much fun, you start them the night before and allow the batter to ferment overnight.

The first part of the batter is made the night before, the second part is added in the morning before making your flapjacks.

I seem to have more success with sourdough cakes than bread so I will definitely try this. Never had cornbread before. I presume I use polenta as I don't thin cornmeal is the same as cornflour

Teresa is a good teacher. The recipes are fairly straight forward but it is fun to see the creations in process and to hear Teresa explain what to look for or describe what something should feel like.
