The basics of cupcake

Vanilla cupcake

This basic yet fundamental cupcake is a most-have in every baker's skills set. In this lecture you will learn how to make the perfect vanilla cupcake using one of the easiest baking techniques; the "one bowl" method.

Piping techniques

Every cupcake needs a frosting on top. There are many techniques to pipe frosting in order to create various looks to your cupcake. In this lecture Meytal will demonstrate several piping techniques for you to learn and utilize on you next cupcake creation.

Banana cupcake

In this lecture you will learn how to bake this delicious and moist banana cupcake using caramelized bananas to increase the moistness. You will learn the "creaming and French meringue" cupcake making technique.

Peanut butter filling

Create the perfect filling to your banana cupcake with this easy-to-follow lecture.

Italian meringue buttercream frosting

Every baker most know how to make this fundamental frosting, which is always useful on every cupcake. Get the ins and outs of how to prepare this buttercream frosting and how to do it successfully. How to color butter cream

Coloring butter cream is not as easy as it sounds. Meytal will share with you her secrets to the perfect coloring technique.

Decorations

In this lecture you will learn how to create three known characters from sesame street in the shape of a cupcake. You will utilize the piping techniques you have learnt in early lectures as well as decorations to match. To make the fondant decorations you can refer to the sugar paste intro and emoji lectures.

Chocolate swiss meringue frosting

Sugar paste work (also known as fondant) is a vital skill that takes hours of practice to perfect. This course is not a sugar paste course but, in this lecture, you will learn the basics of working with sugar paste, the difference between that and gum paste, which type you will use in this course, the tools needed for sugar paste work and all the tips and tricks. Even if you have never worked with sugar paste before, after this lecture you will be able to create many decorations that will upgrade any cupcake.
