I am writing to express my disappointment with the baking course that I enrolled in. The course outlines promised structured instructions on baking techniques, which I hoped to receive. However, the instructor needed to explain basic ideas about cookie-making techniques, such as the difference between creaming the sugar and mixing all dry ingredients first, then adding melted butter and eggs. I also wanted to learn about the difference between using various leavening agents, such as baking soda and baking powder, and the benefits of baking at a high temperature for a short time versus a lower temperature for a longer time. Additionally, I was curious about the use of cornstarch in baking. The instructor mentioned putting the shaped cookie dough in the Freezer for four hours during the course! Is that correct? Why did the cookies lose their shape and become flat? While the instructor is an accomplished baker, I am disappointed that the course did not meet the outlined expectations. I wish I could get a refund Thank you for your attention to this matter.
