    Not detailed doesn’t explain principles of croissant and why we do what we do. Like why do we do single fold or double fold his explanation is very poor and not detailed. I won’t recommend!!!The course doesn’t show you how to make butter block. He doesn’t give you temperature of doughs and which temperature to achieve when mixing croissant dough.

    This was a very good and to the point course. He explains the reason why certain grades of butter work better as well as the type of flour (fat & protein content) it gives you a better understanding of the dough itself.
