For the recipes in this class, a basic electric hand mixer or whisk, loaf pan, baking ring (2 sizes) and a tube pan (chiffon cake pan) are all of the equipment needed to get through the lessons.  Baking at home should be fun, not complicated.

  • This cake was introduced to Japan by the Portuguese over 400 years ago. Traditional baking was not popular in Japan at that time but the basic ingredients of sugar, eggs and flour were available so the cake became very popular.

  • This cake does not have any fat such as butter or oil so the texture is firmer than the previous roll cake and chiffon cake but it is very moist. The simplicity of this cake is one trait which has endeared it to Japanese dessert lovers over the years.

  • Variations on the recipe may omit the green tea or may substitute the honey for corn syrup (mizu ame in Japanese). There is no right or wrong way to make the cake so feel free to experiment with recipes as you like.

  • In the earlier section, we made a Yuzu White Chocolate Mousse and this cake uses those same techniques.

  • The combination of tastes in this cake, the sweet white chocolate and bitter green tea, is what makes this such a delicious dessert. Also, the mousse in the cake is light and makes for a great after dinner treat.
