What's in this Class?

Summer is over and the weather is cooler and time to start baking again. Apples are one of my favorite fruits to bake with so I wanted to share a few recipes with everyone.

Apples are super versatile and make a delicious addition to cakes, muffins, pies and breads. Apples come in both sweet and savory flavors as well as in different textures.

This class has 8 delicious recipes so let's get started.

Lesson Four: Pumpkin Apple Loaf Cake

Lesson Six: Mom's Homemade Apple Pie

Let's make the pie

Difficulty Level: Medium-Low

Special equipment needed: Pie pan, Food processor to mix dough if available (a large bowl can be substituted)

Prep time: 45 minutes plus baking time

  • Download the recipe in the attachment called RESOURCE

  • I know many people reach for a ready make dough because they are don't feel comfortable to make a homemade crust, however, hopefully, this lesson reduces your fear.

  • There are basically 3 steps for this recipe; 1) make the dough (refrigerate for 1 hour or more; 2) roll out the dough and fill with the sautéed apples 3) bake.

  • This dough is fairly easy to work but you should keep it in the refrigerator when not using.

  • The recipe has the ingredient list, instructions and pictures of the finished pie. The videos provide a full step-by-step demo of the preparation process.

  • Since the dough needs to refrigerate for at least one hour before using, you can prepare the apples  and come back & finish the pie later.

Lesson Seven Apple Chai Spice Sweet Rolls

Making the Rolls

Difficulty Level: Medium

Special equipment needed: clean, smooth surface for kneading the dough

   - This bread recipe can be made by hand but if you have a standing mixer please feel free to use. If you increase the recipe portions then you may want to use standing mixer since the dough will become heavier to handle.

Prep time: 30 minutes plus time for the dough to rise (1st rise 60 minutes; 2nd rise 30 minutes)

  • The recipe is the attachment called RESOURCE. Please download to follow along with the video.

  • The biggest work of the recipe is to put together the initial bread dough, after that the next steps are quite easy and fast.

  • During the initial kneading, periodically remove sticky dough from your hands & fingers and the process will be smoother.

  • The active dry yeast does not need to be pre-started in liquid so it can be mixed with the bread flour directly.

  • The chai spice gives an extra zest to this basic recipe. The intensity of the chai spice will vary greatly around the world so please use your judgement on adding it to the bread. Also, the spice portion in the recipe is a personal preference so if you prefer a stronger taste add more spice.

  • This basic sweet bread recipe can be used to make cinnamon rolls, poppy seeds or rolls or other variation as you like.

Lesson Eight: Chocolate Apple Tart

Difficulty Level: Medium-Low

Special equipment needed: Tart pan, Food processor to mix dough if available (a large bowl can be substituted)

Prep time: 30 - 40 minutes

  • Download the recipe in the attachment called RESOURCE

  • I know many people reach for the ready make dough because they are don't feel comfortable to make a homemade crust, however, hopefully, this lesson reduces your fear.

  • A pâte sucrée, or sweet dough, is not flaky like a crust made with shortening. This recipe uses egg instead of water, which changes the texture. This chocolate dough also makes a great base if you want to fill the baked shell with custard and decorate with fresh strawberries, blueberries or other fruit.

  • There are basically 3 steps for this recipe; 1) make the dough (refrigerate for 1 hour or more; 2) roll out the dough and fill with the apples 3) bake.

  • The 'watch out' point for this recipe is that the dough will become soft quickly when you start to roll it out so work swiftly.

  • The recipe has the ingredient list, instructions and pictures of the finished tart. The videos provide a full step-by-step demo of the preparation process.

  • Since the dough needs to refrigerate for at least one hour before using, you can prepare the applesauce and apples or other things and come back & finish the tart later.
