Introduction
2 lecturesThis is the course information video of the Isomalt swan modelling course. Students will learn how to use Isomalt to design, create and model/sculpt the design of a swan and its base and support, including all other features of the swan and associated decorations.
Please note that this is an Intermediate to Advanced level course for Isomalt. You need to have Basic to Intermediate level knowledge before you can attend this course. To ensure you have the right competency level, please complete My Sweet Passion Cakes' basic/intermediate Isomalt courses before attending this particular course.

What is Isomalt? Why do we use Isomalt?

Isomalt is derived form the name Isomaltitol, which is a type of sugar substitute made from beet sugar. Isomalt is used by many chefs, sugar artists and confectioners over conventional sugar because when it comes to making showpieces, cake decorations, dessert garnishes and candy; it is an excellent choice. Compared to sugar, Isomalt is more resistant to humidity and crystallization. Therefore, decorative elements made with Isomalt lasts longer and has excellent structural integrity, compared to normal sugar. In food competitions and culinary art salons, it is very popular with professionals when it comes to creating beautiful showpieces and decorative cake ornaments.
