    I really appreciate the variety of combinations and ingredients. That’s exactly why I picked this course. The chef does a decent job of explaining what they are doing, but not WHY they are doing this. I understand this is set for all skill levels, so someone just starting out may just need to see how methods some together, but it would be great to have some explanations of ratios, or why certain ingredients are used. An example is with the Yuzu tart and Yuzu Cream. What the purpose of the cocoa butter? How does the someone prepare the gelatin (yes its bloomed but not everyone would know what to do here, it does say bloom in the pdf but still..), how does the white chocolate factor in to the cream? Also, the music does overpower the chef quite often. Having a closed caption option would be beneficial.

    A nice course with really interesting recipes but that's mostly what it is - a collection of recipes. Unfortunately, the techniques are not explicitly explained so the learner has to have quite advanced prior knowledge to properly prepare the desserts.

    Loved this my only complaint would be the background music is a little too loud I want to be able to hear chef clearly with only faint background noise

    The content of course was well and effectively explained. Only the background music is so unbalanced and loud compering to the volume of tutor. If you could fix the issue it will be perfect course of learning new recipes of Japanese French Pastries. Thank you!
