๐งโ๐ณ Ingredient List for Moon Cakes:
Equipment Needed: Scale, mooncake molds, medium bowls, whisk, pastry brush, sheet pans, parchment paper
200g all-purpose flour
140g invert sugar syrup (Lyleโs Golden)
50g peanut oil
4g lye water
Variety of pastes for fillings (available at local Asian markets): lotus bean paste, red bean paste, sesame paste, jujube paste
Salted duck egg yolks (optional)
Cornstarch
1 egg (for egg wash)
๐ฅฎ Making the Dough:
Combine invert sugar syrup, lye water, and peanut oil using a whisk. Add flour and mix until evenly blended. Wrap in plastic film and let it rest at room temperature for 2 hours.
๐ฅฎ Filling Preparation:
Measure the egg yolk and the filling together to total 30 grams.
If not using egg yolks, use 30 grams of your desired filling.
Encase the egg yolk (if used) with the filling, forming it into a ball.
๐ฅฎ Moon Cake Assembly Steps:
Preheat the oven to 395ยฐF.
Weigh out 20 grams of dough per mooncake.
Flatten the dough in your palms, wrapping it gently around your filling ball.
Ensure the dough completely covers the filling without gaps.
Coat the filled mooncake ball in cornstarch, shaking off excess.
Dust the mold with cornstarch and remove excess.
Position the mooncake ball in the mold, pressing gently. Place it onto a parchment-lined cookie sheet.
Spritz the mooncake tops lightly with water.
Bake for 5 minutes to set the top pattern.
Remove, then lightly brush just the top with egg wash, avoiding the sides with excess wash.
Return to oven for an additional 10 minutes, baking until the tops are golden brown.
Cool to room temperature.
Once cooled, place mooncakes in a sealed plastic bag for 2 days at room temperature to soften the skin into the desired texture.
