FIRM CONSISTENCY ROYAL ICING RECIPE

INGREDIENTS

4 cups of powder sugar

4 tbsp meringue powder, ( Brand  Chefmaster)

1/4 cup filtered water + 1/4 cup more

1 tsp clear vanilla extract or lime juice

PREPARATION

1.- Mix the meringue powder with the water and set aside.
2.- Sift the powder sugar in the mixer bowl and add the meringue powder mix.
3.- Start beating and slow speed, you will see some climbs of sugar formed, you can add up to 1/4 cup of water more. Increase the speed to high and beat for 4 minutes. You can add few more drops of water if your powder sugar starts to form big balls.
4.- Add the vanilla extract or lime juice and mix for 1 more minute at high speed until firm peaks are formed.
5.- Put the icing in a sealed tight container.

With this firm royal  icing  consistency you can prepare the other consistencies you will need to start decorating cookies like a pro!

Note: Each brand of meringue power acts a little bit different, these next recipes are made with firm consistency icing made with chefmaster meringue powder.

What is important here is to pay attention to the video and see how the consistency should look like, so you can start adding the amount of water on the next recipes, but you might need a little bit more to achieve the right consistency.

To prepare medium consistency you will need:

1/2 cup firm royal  icing

1 tsp filtered water

Flooding consistency:

1/2 cup firm royal icing

3 1/2 tsp filtered water

The presentation of your cookies is super important, I like to use window boxes so your creations can be fully display, this option is when you will be preparing the cookies couple of days before you will use them.

If you are traveling or shipping cookies, tin boxes are perfect, they will keep fresh your cookies for longer.

I am writing hoping the instructor reads this. The video is very difficult to watch, often blurry or parts of what we need to see are off-screen. And there are things done with no explanation of why. Why is this important? Why should I do/not do things? I really want to learn, not just watch you decorate. Yes, the cookies are nice, the recipes are nice, etc. But as far as education goes, this course didn't teach.
