I loved the course. although I think it's too short. I would like to have more practical lessons on how to make different types of ice cream! But I loved the base recipe and I'm sure I'll practice a lot to get the expected results. I loved it because it was a simple recipe with easy-to-find ingredients.

I am a bit confused on the calculation. The target quantity of mix is 100Kg. But if you to add 20kg Sugar + 11kg Fat + 9kg LMS + 5kg Other Solid + 45kg Total Solids = 90Kg Only and Not 100g. Where do the 10Kg Comes from? Is it the water to be added?

For the person who doesn’t have the full knowledge of ice cream making seems very confusing, I think if there was a video to show a sample or demo of making actual ice cream base on certain amount of ice cream mix and as you are explaining also you are making the ice cream therefore would have been easy to understand .
