Instructions
Step 1
Begin by placing 250 grams of sugar into a deep saucepan. Heat over medium-low heat; watch as the sugar begins to bubble and foam. Keep stirring until the sugar darkens to an almost black color.
It’s crucial to monitor it closely to avoid burning. Once the sugar reaches the right color, carefully remove it from heat and gently stir in 200 milliliters of boiling water. Be cautious as this may splatter.
Step 2
Add the remaining 250 grams of sugar to the caramelized mixture and stir until fully dissolved. Then, incorporate the spices (cinnamon and cloves) and the salt, mixing thoroughly.
Next, add 200 grams of butter and wait until it completely melts into the mixture, creating a smooth consistency.
Step 3
In a separate bowl, whisk the 2 eggs. Gradually pour the whisked eggs into the warm mixture while stirring continuously to prevent the eggs from scrambling.
After fully incorporating the eggs, sprinkle in 0.5 teaspoon of baking soda and mix well to combine.
Step 4
Begin adding the sifted all-purpose flour (approximately 1 kilogram) in several increments. It's important to mix thoroughly at each stage.
The dough should be firm enough to hold its shape and not stick to your hands or spread too much when placed on your palm. If necessary, adjust the flour amount to achieve the correct consistency.
Step 5
Once the dough is prepared, cover it and place it in the refrigerator for a minimum of 3 days, or ideally, for up to 1 week. This resting period allows the flavors to meld beautifully.
After the resting period, you can proceed to shape and bake the cookies at your desired temperature. Enjoy the process and the delightful aroma that fills your kitchen!
Servings
Imagine a lovely afternoon picnic, where you can pair these cookies with freshly brewed tea or coffee ☕️. Their robust flavors make them a perfect companion, whether you're lounging with friends or enjoying some "me-time".
For a touch of elegance, serve your kozuli on a beautiful platter with an assortment of fruits, nuts, and cheeses 🧀🍇. They not only satisfy your sweet tooth but also add a festive flair to any gathering. Don’t forget to sprinkle some powdered sugar on top for that beautiful finish!
Share the joy with your loved ones—because nothing beats enjoying a homemade treat with family and friends. Gather around, share stories, and indulge in the taste of tradition! 😊
Equipment
This will be used for caramelizing the sugar. Ensure it's sturdy and can handle high heat.

Variations
Gluten-Free:
Swap out the all-purpose flour for your favorite gluten-free flour blend. You might want to add a little xanthan gum to help the cookies hold together.
Vegan:
Replace the eggs with flaxseed meal or chia seeds mixed with water (1 tbsp of seeds with 3 tbsp of water; let it sit until thickened). Swap the butter with coconut oil or a vegan butter substitute and enjoy the same great taste without the animal products! 🌼
Faq
- How do I know when the sugar is burnt enough?
Look for a deep amber color and a rich aroma. It should have a slightly bitter scent, but be careful not to let it turn black!
- Why do I need to chill the dough for 3 days?
Chilling the dough helps develop the flavors and improves the texture. It’s part of the traditional process for the best results!
- Can I add other spices to the recipe?
Absolutely! Feel free to experiment with flavors like nutmeg or ginger for a unique twist.
- What’s the best way to store these cookies?
Keep them in an airtight container at room temperature for up to a week, or freeze them to enjoy later!
- Can I shape the cookies differently than usual?
Definitely! Have fun with cookie cutters or create your unique shapes. Just ensure they are uniform in thickness for even baking.
- How do I make sure my cookies don’t spread while baking?
Chilling the dough is key. Additionally, make sure not to overmix it, as that can incorporate too much air and cause spreading.
