Step 1
Start by grinding the rolled oats in a blender until they become a fine powder. Add the banana, gingerbread spice mix, and vegetable oil. Mix thoroughly.
To form the base, press the mixture into a 16 cm (6.3 inch) diameter pie dish, creating edges. It’s best to do this with wet hands since the dough can be sticky.
Step 2
In a separate bowl or blender, combine the cottage cheese, banana, gingerbread spice mix, and egg. Blend until smooth. A hand blender or food processor works well for this step.
Step 3
Pour the cottage cheese mixture over the base, spreading it evenly. Then, slice the apple and arrange the pieces on top of the mixture.
Place the pie in a preheated oven set to 180°C (356°F) for approximately 30 minutes. Once baked, allow it to cool before removing it from the dish.
