Instructions
Step 1
In a medium pot, combine the water and the brown sugar over medium heat. Stir occasionally until the mixture comes to a boil.
Once boiling, add the raw almonds and the cinnamon sticks. Let the syrup simmer for 10 minutes, ensuring to stir often.
Step 2
While the syrup is cooking, wash the plums, removing the pits and cutting them into halves.
Place the plum halves in a deep baking dish, spreading them evenly across the bottom.
Step 3
Preheat your oven to 170 degrees Celsius (340 degrees Fahrenheit).
Sprinkle the ground cinnamon evenly over the plums in the baking dish.
Pour the syrup over the plums, ensuring they are well coated. Add the simmered almonds and cinnamon sticks on top of the plums.
Step 4
Place the baking dish in the preheated oven and bake for 1 hour.
During baking, stir the plums gently 2 to 3 times to help ensure even cooking and to submerge them back into the syrup.
Step 5
While the jam is baking, prepare your jars by washing and sterilizing them along with their lids.
Once the jam is finished baking, carefully transfer it into the hot jars. Seal them tightly with the lids.
