Step 1
Start by combining the egg whites and sugar in a bowl. Place a saucepan filled with water about 1/3 full on the stove and bring it to a gentle simmer.
Place the bowl with the egg and sugar mixture over the saucepan and gently heat it, stirring constantly until the sugar has completely dissolved. You should not feel any sugar granules when rubbing the mixture between your fingers.
Once dissolved, remove the bowl from heat and begin to beat the mixture until it forms a firm meringue. When the bowl is completely cool, add the lemon juice and whip for another couple of minutes. Finally, gently fold in the cornstarch.
Spread the meringue evenly on a baking mat to a thickness of about 1.5 cm (0.6 inch) and approximately 25x30 cm (10x12 inches) in size. Bake in a preheated oven at 140°C (284°F) for 30-50 minutes. Allow the meringue to cool completely before applying the curd and cream.
Step 2
In a bowl, mix the egg yolks with the sugar and cornstarch. Stir immediately to combine.
Next, add the cold blackcurrant puree and place the mixture over low heat. Stir constantly until the mixture shows the first signs of boiling, then cook for around a minute until thickened.
Remove from heat and immediately stir in the cold butter until smooth. Transfer the curd to a wide container, cover with plastic wrap touching the surface, and chill in the refrigerator for 30 minutes to 1 hour.
Step 3
In a large bowl, combine cream cheese and heavy cream. Make sure everything is cold. Beat the mixture for about a minute until it reaches a thick, creamy consistency.
Step 4
Spread the blackcurrant curd evenly over the cooled meringue. Then, add the cream on top and smooth it out.
Carefully roll the meringue from one end to the other to create a roll. Wrap it tightly in parchment paper and then in plastic wrap, and refrigerate for 3 hours to stabilize.
After stabilization, you can decorate the roll as desired before serving.
