Step 1
Begin by melting the **butter** until it is completely liquefied. In a mixing bowl, **whisk together** the **egg** and **powdered sugar** until they are well combined. Gradually add the melted butter to the mixture and stir to combine.
Next, sift in the **flour**, **cocoa powder**, and **baking powder**. Mix gently until the dough comes together. After mixing, slightly cool the dough, then roll it out as thin as possible on a floured surface.
Use a cookie cutter to **cut out shapes** of your desired size and place them on a baking sheet lined with parchment paper. Preheat your oven to **180°C (350°F)**.
Bake the cookies for approximately **5 to 7 minutes**, or until they are set but not too hard. Remove them from the oven and allow to cool completely.
Step 2
For the caramel, combine the **sugar**, **glucose syrup**, and **water** in a saucepan over medium heat. Stir gently until the sugar dissolves, then increase the heat and bring to a boil. Cook until the mixture reaches an **amber color**. This should take about **8 to 10 minutes**.
Once the desired color is achieved, slowly add the **heavy cream** while stirring constantly. Be cautious, as the mixture will bubble up. Continue to cook on low heat for an additional **2 to 3 minutes**.

Step 3
Take your cooled cookies and pipe a generous amount of the **caramel** filling onto half of them. Place the remaining cookie halves on top to create sandwich cookies.
