Step 1
In a mixing bowl, combine the cottage cheese, egg, rice flour, baking powder, and a pinch of salt. Mix well until all ingredients are fully incorporated. The mixture should have a thick consistency.
Once mixed, transfer the dough onto a piece of parchment paper and shape it into a boat-like form. Make sure to create a small cavity for the filling.
Step 2
Preheat your oven to 200°C (392°F). Once the oven is ready, place the shaped dough onto a baking tray lined with parchment paper.
Bake the dough for about 15 minutes, or until it is lightly golden.
Step 3
While the dough is baking, prepare the filling by mixing the sour cream and cheese together in a bowl. Adjust the amount of cheese according to your taste preference.
Step 4
After 15 minutes, remove the baking tray from the oven. Carefully spoon the prepared filling into the cavity of each dough boat.
Return the trays to the oven and bake for an additional 10 minutes to allow the cheese topping to melt and become slightly golden. For an ideal finish, use the convection setting if your oven has this feature.
Step 5
Once out of the oven, if desired, you can add a small amount of egg yolk on top of the filling for added richness and color.
Return the boats to the oven for about 3 minutes to allow the yolk to set without overcooking.
Step 6
After baking, remove the cottage cheese boats from the oven and let them cool slightly. Enjoy these delicious treats warm and savor every bite!
