Instructions

Step 1

Prepare the Leavening

In the evening, mix 20 grams of sourdough starter with 55 milliliters of water and 55 grams of flour.

Cover the mixture and leave it overnight at room temperature.

Step 2

Mix the Dough

In the morning, add the leaven to 350 milliliters of water in a bowl.

Stir in 400 grams of all-purpose flour and 100 grams of Manitoba flour until everything is well combined.

Let the mixture rest for 40 minutes to activate the ingredients.

Step 3

Knead the Dough

After resting, add 12 grams of salt to the mixture.

Knead the dough for 2 minutes at medium speed, then increase to high speed and knead for an additional 4 minutes.

Cover the dough and let it rise for 4 to 5 hours.

Step 4

Stretch and Fold

During the rising period, perform 4 to 5 folds of the dough to strengthen its structure.

When it has risen adequately, stretch the dough out onto a floured surface.

Add very cold 70 grams of butter and fold the dough over it to encase the butter completely.

Step 5

Shape and Refrigerate

Shape the dough into a bun and place it in a basket for proofing.

Cover it and refrigerate the dough for anywhere from 8 to 14 hours.

Step 6

Preheat the Oven

Preheat your oven to 250°C (482°F) for at least an hour with a baking dish inside.

Step 7

Bake the Croissant Bread

Remove the dough from the refrigerator and make a cut on top.

Carefully transfer it to the preheated baking dish, spritz with water, cover with a lid, and bake for 17 minutes.

Then, reduce the temperature to 230°C (446°F) and bake for an additional 15 to 17 minutes without the lid.

Step 8

Cool and Enjoy

Once baked, allow the bread to cool slightly before trying to resist the delicious aroma!

Trust me, you won’t wait until it’s completely cool before tasting it!

Faq

  • What if my dough isn’t rising?

If your dough isn't rising, it could be due to inactive yeast. Always check the expiration date on your yeast and ensure you're letting it bloom properly in water.

  • How do I know when my croissants are done baking?

Your croissants should be golden brown on the outside and sound hollow when tapped. If you're unsure, a thermometer can help; they should reach an internal temperature of about 200°F (93°C).

  • Can I freeze the dough and bake later?

Absolutely! You can freeze the shaped croissants before their final rise. Just allow them to thaw in the fridge overnight before baking for a fresh treat!

  • What's the best way to store leftover croissants?

Wrap them in foil or store in an airtight container at room temperature. If you have a lot left, consider freezing them to enjoy later!

  • What could I use if I don’t have a proofing basket?

You can use a small bowl lined with a floured kitchen towel. Just ensure your dough rests without sticking!

  • Is it okay to add flavors like herbs or cheese to the dough?

Absolutely! Adding herbs or cheeses can elevate your croissants to a whole new level. Just be sure to adjust the flour slightly to account for moisture.
