Step 1
In the evening, mix 20 grams of sourdough starter with 55 milliliters of water and 55 grams of flour.
Cover the mixture and leave it overnight at room temperature.

In the morning, add the leaven to 350 milliliters of water in a bowl.
Stir in 400 grams of all-purpose flour and 100 grams of Manitoba flour until everything is well combined.
Let the mixture rest for 40 minutes to activate the ingredients.

After resting, add 12 grams of salt to the mixture.
Knead the dough for 2 minutes at medium speed, then increase to high speed and knead for an additional 4 minutes.
Cover the dough and let it rise for 4 to 5 hours.

When it has risen adequately, stretch the dough out onto a floured surface.

Preheat your oven to 250°C (482°F) for at least an hour with a baking dish inside.

Remove the dough from the refrigerator and make a cut on top.
Carefully transfer it to the preheated baking dish, spritz with water, cover with a lid, and bake for 17 minutes.
Then, reduce the temperature to 230°C (446°F) and bake for an additional 15 to 17 minutes without the lid.
