Step 1
Start by melting 200 grams of tempered dark chocolate (7 ounces) in a heatproof bowl over a pot of simmering water. Stir until the chocolate is completely melted and smooth.
Next, pour the melted chocolate into an apple-shaped mold. Use a spatula to spread the chocolate evenly across the mold, ensuring all edges are coated. Allow the chocolate to set for a few minutes at room temperature, then place it in the refrigerator to firm up further.
Step 2
In a small saucepan, combine 75 grams of berry puree (2.5 ounces) with 10 to 20 grams of sugar (0.35-0.7 ounces) based on your sweetness preference. Heat on medium until it reaches a gentle boil, stirring frequently.
Once boiling, remove the saucepan from heat and stir in 18 grams of gelatin (0.6 ounces) until fully dissolved. Allow the mixture to slightly cool before pouring it into small molds to create your gummies.
Place the filled molds in the freezer to set for at least an hour. Once set, carefully remove the gummies from the molds and store them in an airtight container in the refrigerator.
Step 3
Once the chocolate apple mold has fully set and the gummies are ready, gently remove the chocolate from the mold. Be careful not to break the chocolate shell as you do this.
Fill the hollow chocolate apple with the berry gummies you prepared earlier. You can arrange them in an appealing way to make the dessert visually attractive.
