Instructions
Step 1
In a bowl, mix the cottage cheese with sugar, vanilla sugar, and the egg. Make sure to use smooth cottage cheese without excess moisture.
Add the softened butter and stir until the mixture is smooth. Gradually incorporate the flour mixed with baking powder and a pinch of salt until a soft, elastic dough forms.
Wrap the dough in plastic wrap and refrigerate for 20-30 minutes.
Step 2
Peel the apples and remove the cores, then slice them thinly and chop into small pieces.
Drizzle a bit of lemon juice over the apples, then add sugar, cinnamon, and cornstarch and mix well.
Let the mixture sit for 10 minutes to allow the juices to extract, and drain any excess juice.
Step 3
Roll out about 2/3 of the dough and place it onto a parchment-lined baking sheet.
Spread the filling evenly over the dough, leaving a few centimeters from the edge.
Roll out the remaining dough into a circle, and place it on top of the filling. Brush the surface with the egg yolk and milk mixture and fold the bottom layer over the top to create a rim. Brush the edges with the egg wash.
Make a few small cuts in the center for ventilation and, if desired, create a decorative pattern with a sharp knife.
Step 4
Preheat the oven to 180°C (350°F).
Bake the pie for 40-45 minutes until it turns golden brown.
