Instructions
Step 1
Dissolve the *yeast* in slightly warm milk. Ensure the milk is not too hot, as it might *kill the yeast*. Set aside to activate.

Mash the *banana pulp* using a fork until smooth. Make sure the bananas are fully ripe for best flavor.
Step 3
In a mixing bowl, combine the *banana puree*, milk with yeast, water, salt, and sugar. Mix well until everything is fully combined.
Step 4
Add the *flour* to the wet ingredients and start kneading the dough. Knead for about *10 minutes* until you have a soft, elastic dough. Then, add the *butter* in pieces and knead it into the dough until fully incorporated.
Step 5
Place the dough in a bowl lightly greased with a few drops of *oil*. Cover and let rise at room temperature until it doubles in volume.
Step 6
After rising, divide the dough into *12-14* equal pieces. Form each piece into a round ball. Let them rest under a cloth for about *10 minutes*.
Step 7
Shape the dough balls into round rolls. Place them on a baking sheet lined with parchment paper, ensuring they're spaced apart. Cover with a cloth and let them rest for *20-30 minutes*.
Step 8
While the rolls are proofing, preheat the oven to *180°C (350°F)*. Brush the proofed rolls with the egg yolk mixture. Optionally, sprinkle with crushed nuts and sugar.
Step 9
Bake in the preheated oven for *20-25 minutes* until the rolls are golden brown. Enjoy warm or at room temperature.
