Step 1
In a large mixing bowl, cream together 100 grams of softened unsalted butter and 50 grams of granulated sugar along with 50 grams of brown sugar until the mixture is light and fluffy.
Add in one egg and mix until well combined. Gradually sift in 200 grams of all-purpose flour, 2 grams of baking powder, and 2 grams of salt, stirring until a dough forms. Finally, fold in 100 grams of chopped pistachios.
Step 2
Cover the cookie dough with plastic wrap and refrigerate for at least 30 minutes. Chilling the dough helps in maintaining the shape of cookies while baking and enhances the flavors.
Step 3
In a saucepan over medium heat, combine 100 grams of granulated sugar and allow it to melt, stirring occasionally until it turns a rich amber color.
Once melted, carefully add 50 grams of unsalted butter into the pan, stirring until well combined. Slowly pour in 100 milliliters of heavy cream, and stir continuously until smooth. Add a pinch of sea salt for flavor enhancement.
Step 4
Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper. Scoop the chilled cookie dough onto the baking sheet, spacing them about 5 centimeters (2 inches) apart.
Bake for 12-15 minutes or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Step 5
Once the cookies have cooled, drizzle the prepared caramel on top of each cookie. Optionally, sprinkle with a few more chopped pistachios for decoration.
