Instructions
Step 1
In a medium saucepan over high heat, combine the cherries and sugar. Cook until the mixture reaches a boil, then reduce the heat to low.
Gradually stir in the cornstarch mixed with the water, stirring constantly for about 2-3 minutes until the filling thickens. Remove from heat and transfer to a plate to cool to room temperature.
Step 2
In a large mixing bowl, whisk together the egg, sour cream, soft butter, sugar, and a pinch of salt until combined.
Next, pour the liquid mixture into the bowl with the flour and baking powder. Mix until a soft and pliable dough forms.
Step 3
On a greased pie dish, layer a portion of the dough to cover the bottom. Add the cooled cherry filling evenly on top.
Using the remaining dough, create a crisscross pattern over the cherry filling for a beautiful design. Brush the top with egg yolk, and sprinkle with brown sugar.
Step 4
Preheat your oven to 175°C (350°F). Place the pie in the oven and bake for about 45 minutes or until the crust is golden brown.
