Step 1
In a large mixing bowl, combine sugar and eggs, whisking them together until the mixture becomes light and creamy.
Add the milk and vegetable oil, mixing well. Gradually incorporate the flour, baking powder, cocoa powder, and a pinch of salt. Whisk until you obtain a smooth batter. Pour half of the batter into a prepared cake pan.
Bake in a preheated oven at 180°C (350°F) for about 30-35 minutes or until a toothpick comes out clean. Let it cool completely.
Step 2
In a small saucepan, combine segmented mandarins, sugar, and water. Heat over medium flame until it simmers.
Mix the cornstarch with a little water to make a slurry, then add it to the saucepan. Continue to stir until the mixture thickens. Let it cool before filling the cake.
Step 3
In a mixing bowl, combine cream cheese, heavy cream, confectioners' sugar, and vanilla extract. Beat until you achieve stiff peaks.
This cream will be used for both the filling and final decoration of your cake.
Step 4
Once the biscuit layers are cool, slice them into two equal parts. Place the first layer on a serving plate and spread a portion of the mandarin filling evenly over it.
Add a layer of cream and then place the second biscuit layer on top. Repeat with the remaining layers. Smooth the top and sides of the cake with the remaining cream.
Step 5
Cover the cake with plastic chocolate, carefully smoothing it out for an even finish.
