Step 1
In a large bowl, combine 200 grams (7 ounces) of sweetened shredded coconut, 100 grams (3.5 ounces) of condensed milk, 50 grams (1.75 ounces) of powdered sugar, and 1 teaspoon of vanilla extract.
Mix well until all ingredients are thoroughly combined. The mixture should be sticky and hold together when pressed.
Step 2
Using your hands, take small portions of the coconut mixture and roll them into bite-sized bars. Aim for about 25 grams (0.9 ounces) each.
Place the shaped bars on a lined baking tray and refrigerate for at least 30 minutes to firm them up.
Step 3
While the coconut bars are chilling, melt 200 grams (7 ounces) of dark chocolate with 1 tablespoon of coconut oil in a heatproof bowl over simmering water. Stir until smooth.
Once melted, remove from heat and let cool slightly before using.
Step 4
Remove the coconut bars from the refrigerator. Dip each bar into the melted chocolate, ensuring it's fully coated.
Allow any excess chocolate to drip off before placing the bars back on the lined baking tray. Repeat until all bars are coated.
Step 5
Refrigerate the coated bars for an additional 30 minutes to allow the chocolate to set properly.
