For the Topping

50 grams (1.8 ounces) of 82.5% butter
50 grams (1.8 ounces) of powdered sugar

Instructions

Step 1

Prepare the Candied Fruits

Start by rinsing the candied fruits twice in cold water. Next, pour hot water (around 60-70°C or 140-158°F) over them and let them soak for 30 minutes. Afterward, drain the water and allow the fruits to dry.

Next, soak the fruits in rum or cognac, adding a little water to just cover them. Leave this mixture to rest for at least 3 hours, but overnight is preferred. Once soaked, drain and chop the candied fruits.

Step 2

Make the Dough

In a large bowl, combine the butter and sugar, mixing until well blended. Then, add the egg, cottage cheese, lemon zest, cinnamon, cardamom, and nutmeg, continuing to mix.

In another bowl, combine the flour, baking powder, and salt. Gradually add this mixture to the cheese mixture, kneading gently until a soft dough forms. Finally, fold in the soaked and chopped candied fruits.

Step 3

Shape and Bake the Stollen

Divide the prepared dough into two equal portions and shape each into a Stollen loaf or place it into a loaf pan. Preheat your oven to 170-180°C (340-356°F) and bake the Stollen for 45-50 minutes.

Step 4

Finish and Store the Stollen

While the Stollen is still warm, melt the remaining butter and use a brush to coat the entire surface. Dust with powdered sugar for an added sweet finish.

The Cream Cheese Stollen can be enjoyed immediately, but for enhanced flavor, let it rest for 2-3 days. Wrap it tightly in baking paper or foil for storage, and it will last up to 3 weeks.
