Gradually mix in flour until a soft dough forms. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
Place the dough in a lightly greased bowl and cover it with a damp cloth. Let it rise in a warm place for about 1.5 to 2 hours, or until it doubles in size.
Step 2
In a medium saucepan, whisk together egg yolks, 180 grams of sugar, vanilla sugar, and cornstarch until smooth.
Gradually add milk while whisking to combine. Cook over medium heat, stirring continuously, until the mixture thickens. Once thickened, remove it from the heat and let it cool completely.
Step 3
Once the dough has risen, punch it down and roll it out onto a floured surface into a rectangle. Spread the cooled custard cream evenly across the top.
Roll the dough tightly into a log, then cut it into equal pieces. Place the rolls in a greased baking dish. Brush the tops with a mixture of beaten egg yolk and a splash of milk.
