Step 3
For the filling, in a bowl, beat the *softened unsalted butter* with *sugar* until light and fluffy. Add in the *eggs* one at a time, continuing to beat the mixture.
Finally, add the *almond flour* and mix until well combined and smooth.
Step 4
Once the dough has risen, turn it out onto a floured surface. Roll it out thinly to create a rectangular shape. Spread the filling evenly across the dough, leaving a small border around the edges.
Add a sprinkling of *almond flakes* and frozen *raspberries* as desired. Carefully roll the dough into a tight log.
Slice the log lengthwise, leaving one end uncut, and twist the two halves together. Arrange the cruffin in a lined baking pan, cover, and let them rise in a warm place at *40°C (104°F)* for another *40-60 minutes*.
Step 5
Preheat your oven to *180°C (356°F)*. Once the cruffins have finished their final rise, bake for *20 minutes* at this temperature.
Then, lower the temperature to *160°C (320°F)* and continue baking for another *30-40 minutes*, until the tops are golden and a toothpick inserted comes out clean. Baking times may vary depending on your oven, so keep an eye on them.
Step 6
While the cruffins are cooling, prepare the frosting. Beat the *softened unsalted butter* with *powdered sugar* until creamy and smooth.
Slowly add the *cold cream cheese*, whipping for about *5-7 minutes* until fully integrated and fluffy.

Once the cruffins are completely cool, generously spread the cream cheese frosting on top. Feel free to decorate further, and then it’s time to serve and enjoy this *delicious treat*!
