Slowly incorporate the remaining milk into the batter, whisking thoroughly. Finally, add 50 grams of melted butter and mix until smooth.
Heat a non-stick skillet over medium-high heat. Pour a ladleful of batter into the pan, swirling it to create a thin layer. Cook for about 1-2 minutes on one side until lightly golden, then flip and cook the other side.
Repeat the process for the remaining batter, stacking the cooked crepes on a plate and covering them to keep warm.
While the crepes are cooking, prepare the sauce by zesting the peel of 2 oranges and squeezing their juice into a separate bowl.
In a saucepan, melt 50 grams of butter over low heat and stir in 2.5 tablespoons of sugar along with the orange zest. Be careful not to let the sugar burn.
Once the sugar is melted, pour in the orange juice and let the mixture simmer, stirring constantly until it slightly thickens.
Reduce the heat to low and fold the cooked crepes into triangles, arranging them in the sauce. Allow them to soak in the sauce for a few minutes.
