Return the saucepan to low heat and cook the dough for about 2 minutes to dry it out slightly. Transfer the dough to a mixing bowl, and allow it to cool for a few minutes before adding eggs one at a time, mixing well after each addition until the batter is smooth and shiny.

Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper. Using a piping bag, pipe the choux paste into strips about 10 centimeters (4 inches) long, leaving space between each for expansion during baking.
Bake in the preheated oven for 20-25 minutes, or until they are golden brown and puffed up. Once done, turn off the oven and let them sit inside for 5 more minutes. This helps them dry out and maintain their shape.
Step 3
