Step 1
Begin by mixing together the eggs, cheese, sour cream, and spices in a bowl. It’s important to ensure the mixture is well blended and smooth. Next, spread this mixture evenly on a silicone baking paper, shaping it into a rectangle.
Preheat your oven to 180°C (350°F) and bake the base for about 15-20 minutes, until it sets.
For the filling, blend the chicken fillet in a processor until it becomes minced. Then, mix in your selected spices. In a skillet, finely chop the onion and sauté it with grated carrot until golden.
Once the base has cooled, generously spread the minced chicken mixture followed by the sautéed vegetables. Carefully roll it into a tight log.
Wrap the roll in foil and bake at 180°C (350°F) for 45 minutes. After this, slightly unwrap the top, increase the temperature to 200°C (392°F) and bake for an additional 15 minutes for a lovely golden finish.
Step 2
Start by pouring boiling water over the spinach to soften it. Drain the water and allow the spinach to cool completely. Then, add the egg yolks and salt to the spinach and blend until smooth.
Gradually introduce the sifted flour into the mixture and stir well until it’s combined.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the fluffy egg whites into the spinach mix, being careful to maintain the volume.
Spread the spinach mixture onto a silicone-lined baking tray and bake in the preheated oven at 180°C (350°F) for 10-15 minutes, until firm.
After cooling, carefully peel off the parchment paper and spread a generous layer of creamy cheese over the top. Lay down slices of smoked trout over the cheese.
Finally, roll the mixture tightly and wrap it in foil or plastic wrap, then refrigerate to set before serving.
