Instructions
Step 1
In a mixing bowl, combine flour, cold butter pieces, and vanilla sugar. Make sure your butter is very cold to achieve a flaky dough.
Add in the cold water and quickly gather the mixture into a ball, being careful not to overwork the dough.
Wrap the dough in plastic wrap and place it in the freezer for about 30 minutes.
Step 2
While the dough is chilling, peel and cube the apples. In a bowl, mix the cubed apples with chopped pecans, brown sugar, cinnamon, and lemon juice.
In a hot skillet, melt butter and add the apple mixture. Allow the sugar to caramelize as you stir occasionally.
Once caramelized, cover the skillet and let it simmer on medium heat for a few minutes. Finally, sprinkle cornstarch over the apples while stirring to combine everything well. Set aside to cool.
Step 3
Once the dough is ready, divide it into two parts: one slightly larger than the other. Roll out the larger portion to fit your pie dish and place it in the dish, puncturing the bottom with a fork to prevent bubbling.
Pour the apple filling into the prepared crust, then roll out the remaining dough and cut it into strips to create a lattice top.
Step 4
Brush the top of the pie with a mixture of egg yolk and milk to achieve a golden finish.
Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit) and bake the pie for about 30 minutes, or until the top is golden brown.
Once baked, let the pie cool slightly before serving. Pair it with a scoop of vanilla ice cream for an extra treat!
