For Greasing Before Baking

White of 1 egg
Pinch of salt
1 tsp. salt

Instructions

Step 1

Prepare the Dough

Place the flour, yeast, and salt in the bowl of a mixer, and stir.

Turn the mixer on low speed, add the olive oil and honey, and start kneading the dough. Gradually pour in the water.

Then, increase the speed to medium and knead the dough for about 10 minutes until it is smooth and not too sticky.

Step 2

Let the Dough Rise

Transfer the dough to an oiled bowl, drizzle a little vegetable oil over the top, and cover. Leave it in a warm place for 1.5 to 2 hours.

Step 3

Shape the Bagels

Knead the risen dough and place it on an oiled work surface. Divide into 4 parts, and roll each part into an even ball.

Spray with vegetable oil, cover with a towel, and leave for 15-20 minutes.

Open the balls with your fingers, first make a hollow in the middle of the ball, then expand, creating a bagel shape.

Step 4

Preheat the Oven

Preheat the oven to 200°C (390°F).

Spray a baking tray with vegetable oil and line it with baking paper.

Step 5

Prepare the Boiling Solution

Boil the water in a medium saucepan, add the baking soda, salt, and honey, stir, and turn the heat down to low.

Step 6

Boil the Bagels

Place each bagel in lightly boiling water, cook for 30 seconds on one side, then turn over and cook for another 30 seconds on the other side.

Transfer with a slotted spoon to the prepared baking tray.

Step 7

Grease and Coat the Bagels

Grease the boiled bagels with whipped egg white.

Dip each bagel into the ready-made bagel mix to coat evenly.

Step 8

Bake and Cool

Bake the bagels for about 20 minutes or until golden.

Remove from the oven, cover immediately with a towel, and let cool to room temperature.

Faq

  • Why is my dough too sticky?

If your dough is too sticky, try adding a bit more flour, one tablespoon at a time, until the dough reaches the desired consistency. Be cautious not to add too much at once.

  • How do I know when the bagels are done baking?

Your bagels should be a lovely golden brown color. Gently tap them—they should sound hollow when fully baked.

  • Can I freeze the dough?

Yes, you can freeze the dough after shaping it into bagels. Thaw them in the fridge overnight before boiling and baking as directed.

  • What’s the purpose of boiling the bagels?

Boiling bagels helps create a chewy crust by gelatinizing the starch on the bagel's surface, which keeps the inside nice and soft. It's a crucial step for that perfect texture.

  • How can I achieve a more flavorful bagel?

Experiment with adding different ingredients like garlic powder, onion powder, or dried herbs to the dough. You can also try different toppings like sesame seeds, poppy seeds, or everything bagel seasoning.

  • My bagels didn't rise enough, what went wrong?

This could be due to old or inactive yeast. Always check the expiration date on your yeast and consider proofing it in a bit of warm water with sugar before adding it to the dough.
