Instructions
Step 1
Start by selecting 4 medium oranges, preferably with thick skins. Carefully cut the skin into quarters, removing it from the orange. Then, slice the peel into strips approximately 4-5 mm thick.
Place the orange peel strips into a pot and add 1 teaspoon of salt and enough water to cover them. Bring the water to a boil and let it simmer for about 10 minutes.
Step 2
After boiling, drain the water and repeat this process another 2 times. This will help to eliminate any bitterness from the orange peel.
While boiling the peels, squeeze the juice from the oranges into a bowl; you will need this later.
Step 3
Once you have drained the orange peels, place them in a clean pot and pour in the orange juice. Weigh your cooked peels and add the same amount of sugar by weight to the pot.
Cook over low heat for 2 to 2.5 hours, until the peels become tender, slightly caramelized, and juicy.
Step 4
After cooking, drain the syrup from the candied peels and spread them out on a baking tray. Dry them in an oven at 100°C (about 212°F) for 15-20 minutes.
For the glaze, melt 50 grams of dark chocolate and 10 grams of cocoa butter together. Once melted, dip the candied orange peels into the chocolate mixture and set them aside.
Step 5
Place the glazed orange peels in the refrigerator for about 30 minutes to allow the chocolate to set. And your delightful homemade candied orange peels are ready to enjoy!
