Step 1
Start by mixing the strong flour with the cold, diced butter to form a crumble. It’s essential to ensure the butter stays cold so the dough remains light and flaky.
Add the matson mixed with *baking soda*, egg yolks, and a pinch of salt. Knead everything together gently to form a smooth, *very soft dough* that doesn't stick to your hands. Wrap the dough in plastic and let it rest for *15-20 minutes* at room temperature.
Step 2
In a mixing bowl, mash the soft dates until smooth, then add the crushed nuts, melted butter, sugar, flour, and vanilla sugar. Mix everything together until it forms a cohesive filling that sticks together well.
Step 3
Divide both the dough and filling into two equal portions. Lightly roll out each piece of dough into a flat shape. Place a spoonful of the filling in the center of each dough piece.
Gather the edges towards the center *carefully*, pinch to seal, and shape it into a round disc approximately *1.5 cm thick*. Transfer the filled pastries onto a baking sheet.
Step 4
Brush the tops of the pastries with egg yolk for a rich golden color. Using a fork, create patterns on the surface and poke holes to allow steam to escape during baking.
Step 5
Preheat your oven to *200 degrees Celsius (390 degrees Fahrenheit)*. Place the baking sheet in the oven and *bake for about 25 minutes*, or until the pastries are golden brown and irresistible.
