Step 1
Start by combining the **flour**, **sugar**, and **salt** in a large bowl. In a separate bowl, dissolve the **yeast** in **warm milk**, allowing it to activate for about 5 minutes. Once bubbly, add the **butter** to the mixture and gradually mix it into the dry ingredients. Work everything together until you have a smooth dough.
Cover the bowl with a damp cloth and let it rise in a warm place for about 1 hour or until it doubles in size.
Step 2
While the dough is rising, prepare the filling. In a bowl, mix together the **finely chopped sausage**, **grated cheese**, **mustard**, and half of the **beaten eggs**. Stir until all ingredients are well combined. This mixture will add a great flavor to your pastries.

Once the dough has risen, preheat your oven to 200°C (400°F). On a floured surface, roll out the dough to about 5mm thickness. Cut the dough into squares of about 8-10cm. Place a spoonful of the sausage filling into the center of each square.
Fold the dough over the filling to create a triangle or pocket shape and pinch the edges to seal them tightly. Brush the tops with the remaining **beaten egg** to give them a golden color while baking.

Place the pastries on a baking tray lined with parchment paper, ensuring there is space between each one. Bake in the preheated oven for approximately 20 minutes or until they are **golden brown** and cooked through. Keep an eye on them to achieve the perfect color.
