Step 1
In a medium saucepan, combine unsalted butter, honey, and granulated sugar. Heat it on a double boiler until the sugar is completely dissolved, ensuring there are no granules left.
Once the sugar has melted, stir in baking soda and mix until the mixture turns light in color. Remove it from heat and let it cool for a few minutes.
In a separate bowl, whisk together large eggs with a pinch of salt. Gradually pour in the honey mixture while mixing with a hand mixer until well combined.
Sift the all-purpose flour into the bowl and mix until it forms a dough. Shape it into a ball, wrap it in plastic, and refrigerate for at least 2 hours.
Step 2
Preheat your oven to 180°C (356°F). Once the dough has chilled, roll it out on a floured surface to your desired thickness.
Cut out circles or rectangles of the dough, depending on your preference for cake layers. Bake the layers in the preheated oven for 3 to 5 minutes. Be careful not to overbake them, as you want them soft.
Step 3
In a mixing bowl, pour in the cold heavy cream and start whisking it until it begins to thicken slightly.
Then, add in the sour cream and powdered sugar. Continue to whisk until the mixture is fluffy and holds stiff peaks.
Step 4
Once the layers have cooled, start stacking them by spreading an even layer of the cream mixture between each layer.
Once assembled, allow the cake to rest for some time so it can soak up the flavors. After that, it’s ready to savor!
