Step 1
In a large mixing bowl, combine the vegetable oil, eggs, apple cider vinegar, and honey. Mix these ingredients well until they are fully combined.
In a separate bowl, mix together the sugar, salt, baking soda, and vanilla. Gradually add this dry mixture to the wet ingredients, stirring to combine.
Slowly incorporate the all-purpose flour until the dough becomes soft and slightly sticky.
Step 2
Once your dough is prepared, take a small amount and roll it into a ball, then flatten it slightly to form a cookie shape. Repeat this process for the remaining dough.
Place the cookies on a baking tray lined with parchment paper.
Step 3
Beat one egg yolk and use it to brush the tops of the cookies. This will give them a beautiful golden color when baked.
Sprinkle some additional sugar over the top of the cookies for added sweetness and texture.
Step 4
Preheat your oven to 180-200 degrees Celsius (about 350-400 degrees Fahrenheit). Bake the cookies for about 15-20 minutes, or until they are golden brown.
Once baked, remove them from the oven and let them cool on a wire rack.
