In a saucepan, combine the **sugar**, **honey**, and **unsalted butter**. Cook them over low heat until the mixture turns a beautiful **amber color**. Once you achieve this color, carefully **cool the mixture to 70°C (158°F)**.
Next, add the **egg** and **baking soda** mixed with the **all-purpose flour**. Stir until the mixture is completely **smooth and homogeneous**.
Roll the dough into a thin layer, about **0.5 mm** thick, and bake it in a preheated oven at **160°C (320°F)** for about **10 minutes** using the top and bottom heat setting.
As soon as you take it out of the oven, cut it into desired shapes using a ring mold. Allow it to **cool completely**.
Step 2
In another saucepan, combine **sugar** and **glucose syrup** and cook until it reaches an **amber color**. Once you see this gorgeous color, carefully pour in the **hot heavy cream** while stirring constantly.
Add in the **unsalted butter** and stir until fully incorporated. Allow the caramel to stabilize for **6 to 8 hours** at room temperature.
Step 3
In a mixing bowl, combine **cream cheese**, **heavy cream (10%)**, **vanilla paste**, and **condensed milk**. Gently **heat the mixture to 65°C (149°F)**, stirring continuously to blend the ingredients well.
Once heated, stir in the **gelatin mixture** and mix until well combined. Allow this mixture to cool down to **40°C (104°F)**.
In a separate bowl, whip the **heavy cream (33%)** to soft peaks. Carefully fold the whipped cream into the cream cheese mixture using a spatula, ensuring not to deflate the whipped cream.
