Step 1
In a large mixing bowl, combine the all-purpose wheat flour, sugar, matcha, and salt.
Add in the milk, egg yolks, whole egg, alcohol, lemon juice and zest, and mix everything well. Gradually incorporate the soft butter into the mixture.
Knead the dough until it's smooth and stretchy—this should take around 5 minutes. Transfer the dough to a lightly greased bowl and cover it with plastic wrap or a damp towel.
Step 2
Allow the dough to rise in a warm area for approximately 90 to 120 minutes. Make sure to punch it down once during the rising process. The dough should increase in size to about three times its original volume.
Step 3
Once the dough has risen, divide it into about 20 to 24 pieces, with each piece weighing around 40 to 50 grams. For easier shaping, roll out the dough to a thickness of approximately 1.5 centimeters and cut out circular shapes.
Let the shaped donuts rest for another 45 to 60 minutes at room temperature to allow them to rise further.
Step 4
Heat the peanut oil in a deep fryer or a large pot to a temperature between 160 and 180 degrees Celsius (320 to 356 degrees Fahrenheit).
Carefully place the donuts into the hot oil, frying them until they turn golden brown. Use paper towels to drain excess oil from the donuts after frying.
Step 5
Using a small skewer, poke an opening into the fried donuts and fill them with your favorite filling. Finally, dust the finished donuts with a generous amount of powdered sugar and matcha for that extra touch. Serve and enjoy your delicious matcha donuts!
