Instructions
Step 1
In a large mixing bowl, combine the ground chicken, feta cheese, and spinach. Beat the egg in a separate bowl and then add it to the mixture along with salt and pepper to taste.
Mix well until all the ingredients are fully integrated. With wet hands, form the mixture into patties, keeping in mind that they may be a bit sticky.
Coat each patty in breadcrumbs and place them on a baking sheet. Freeze the patties before vacuum sealing them. When ready to cook, fry them over medium-low heat with a partially covered lid until golden brown.
Step 2
Take some of the remaining ground chicken mixture from the patties and stuff it into cleaned bell peppers. Fill them generously for the best flavor.
Place the stuffed peppers in a baking dish and cover them with foil. Bake in a preheated oven at 180 degrees Celsius (about 350 degrees Fahrenheit) for 30 minutes.
In the last 10 minutes, uncover and sprinkle cheese on top, allowing it to melt and become bubbly.
Step 3
Grate the raw potato finely and squeeze out any excess moisture before adding it to a bowl with ground meat.
Finely chop the onion and carrot, then sauté them until fully cooked. Include the chopped spinach as well.
Combine all ingredients together and form into patties with wet hands. Again, freeze them before vacuum sealing for later use.
Step 4
In a separate mixing bowl, add the ground chicken, seasoning with salt and spices to enhance the flavor. Optionally, mix in chopped cilantro or other herbs for freshness.
With damp hands, roll the mixture into small meatballs. Fully freeze the meatballs before vacuum sealing for storage.
These meatballs can be used in soups or sautéed in sauce and served with your favorite side dish.
