Instructions
Step 1
In a large bowl, combine warm milk and yeast. Let it sit for about 5 minutes until it becomes frothy. Then, add sugar, salt, egg, and vegetable oil to the mixture.
Gradually add the flour while mixing until a dough forms. The dough should be soft and slightly sticky but manageable. If it’s too sticky, add more flour as needed.
Step 2
Knead the dough on a floured surface for about 8-10 minutes until it is smooth and elastic. Place it in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour or until it has doubled in size.
Step 3
While the dough is rising, in a skillet over medium heat, cook the minced meat until it’s browned. Add mixed vegetables and tomato paste, and cook for another 5-7 minutes. Season to taste. This filling can also be made with just vegetables for a vegetarian option.
Step 4
Once the dough has risen, preheat your oven to 180°C (350°F).
Roll out the dough on a floured surface until it is about 1/4 inch thick. Cut it into circles or rectangles, and place a portion of the filling and some grated mozzarella cheese in the center of each piece. Fold the edges over to create pockets or borders.
Brush the edges with an egg wash to create a golden crust and sprinkle more cheese on top if desired.
Step 5
Place the assembled pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for about 30 minutes or until golden brown. Keep an eye on them to avoid burning.
Once baked, let them cool slightly before serving. Enjoy your delicious meat and vegetable stuffed pastries!

Equipment
A good mixing bowl is essential for combining your dough ingredients. Make sure it’s large enough to allow for some vigorous mixing!

This tool will help incorporate air into your mixture, especially when mixing the egg and wet ingredients together. A standard whisk will do the trick!

A deep baking dish is perfect for holding the pastry, making sure it cooks evenly. Try to choose something safe for high temperatures, around 180°C (356°F).

Using a grater for the mozzarella cheese ensures it melts evenly and integrates beautifully into your filling. A medium-sized grater is ideal.

Variations
Faq
- What type of flour should I use for the dough?
You can use all-purpose flour for the best results, but if you need a gluten-free option, a good gluten-free flour blend will also work!
- How do I know when the pastry is fully baked?
The pastry should be golden brown on top, and when you tap the bottom, it should sound hollow. Trust your eyes and ears!
- Can I prepare the filling in advance?
Absolutely! Feel free to prepare your filling a day ahead of time and store it in the fridge. Just ensure to let it cool before using it!
- What other fillings can I use?
You can experiment with anything you like! Consider adding spinach and feta, or even making a sweet version with fruits and cinnamon.
- Why is my pastry not rising?
This may be due to inactive yeast. Make sure your yeast is fresh and the liquids used are at the right temperature—warm, but not too hot!
- What’s the best way to store leftovers?
Store any leftovers in an airtight container in the fridge and reheat in the oven for the best texture!
