Spread the prepared meringue evenly onto a 30x40 cm (12x16 inch) baking tray lined with parchment paper. It's important to create an even layer to ensure uniform baking.
Bake in a preheated oven at 150°C (300°F) for 20 to 25 minutes. The meringue should be firm and dry to the touch.
Step 3
Once baked, remove the meringue from the oven and allow it to cool slightly. Gently turn it out onto a clean piece of parchment paper.
Spread the delicious cream mixture evenly over the top, then sprinkle with pistachios and fresh berries as desired. Carefully roll the meringue up from one end, using the parchment to assist.
Step 4
For decoration, whip together 40 grams (1.4 ounces) of heavy cream with 5 grams (0.2 ounces) of powdered sugar until fluffy.
