Step 1

Prepare the Meringue

Start by carefully separating the egg whites from the yolks, ensuring that no yolk gets into the whites. In a clean, dry bowl, begin to whisk the egg whites with a pinch of salt.

Once the mixture resembles ‘beer foam’, gradually add the sugar while continuing to whisk. Keep whisking the egg whites until they reach stiff peaks.

When the meringue is firm, gently fold in the cornstarch and continue to whisk for a further 10 seconds.

Line a baking sheet with parchment paper, preferably silicone-coated, and spread the meringue evenly across the parchment. Bake in a preheated oven at 140°C (284°F) for about 30 minutes.

Make the Cream Filling

In a separate bowl, combine the cream cheese, heavy cream, and powdered sugar. Whisk these ingredients together until the mixture is thick and creamy. Remember to reserve some cream for decoration later.

Assemble the Meringue Roll

After baking, carefully flip the meringue over so the top side is facing down. Spread the cream filling evenly onto the meringue layer.

Next, add your desired filling of fruit jam and any fresh berries, spreading them evenly as well.

To create the roll, gently lift one edge of the meringue and start rolling it tightly. Use the parchment paper to help with the rolling process.

Decorate and Serve

Once the roll is formed, use the reserved cream to decorate the top as desired. You can add extra berries or a dusting of powdered sugar for a beautiful finish.
