Step 1
Begin by preheating your oven to 160 degrees Celsius (320 degrees Fahrenheit). In a mixing bowl, whisk together the flour, sugar, vanilla, and a pinch of salt. Melt the butter and allow it to cool slightly before adding it to the mixture.
In another bowl, combine the egg yolks with the milk and whisk until well mixed. Pour this mixture into the dry ingredients and mix until just combined. Finally, sprinkle in the baking powder and fold gently.
Step 2
Pour the batter into a prepared cake pan and place it in the oven. Bake for 20 minutes at 160 degrees Celsius (320 degrees Fahrenheit). After 20 minutes, reduce the temperature to 140 degrees Celsius (284 degrees Fahrenheit) and continue baking for an additional 30 minutes. Use a toothpick to check for doneness; it should come out clean when the cake is ready.
Step 3
While the cake is baking, prepare the meringue. In a clean mixing bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the sugar, continuing to beat until the mixture is glossy and holds stiff peaks.
Gently fold in the almond flakes or chopped walnuts. Once the cake is out of the oven, evenly spread the meringue mixture on top and return it to the oven for a further 10 minutes until lightly golden.
Step 4
In a separate bowl, whip the heavy cream until it reaches soft peaks. Slowly mix in the sweetened condensed milk until fully incorporated. This will create a rich, creamy filling that complements the cake.
Step 5
Once the cake has cooled completely, slice it in half horizontally. Spread a generous layer of the cream filling on the bottom half, then place the top half back on. Finally, decorate the top with any remaining cream or meringue as desired.
