Instructions
Step 1
In a mixing bowl, combine the egg yolks and powdered sugar. Beat them together until they are well blended.
Next, add the melted unsalted butter to the mixture and mix thoroughly.
Then, sift in the baking powder and all-purpose flour. Use your hands to knead the mixture until a smooth dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Step 2
Preheat your oven to 180°C (356°F). Once the dough is chilled, roll it out on a floured surface to a thickness of about 0.5 centimeters (0.2 inches).
Cut the dough into desired shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 7-10 minutes, or until the edges are lightly golden. Let the cookies cool completely on a wire rack.
Step 3
In a microwave-safe bowl, combine the orange chocolate and heavy cream. Heat the mixture in the microwave in short intervals, stirring in between, until the chocolate is melted and smooth.
Once melted, whisk the ganache to ensure it’s well mixed. Allow it to cool slightly before transferring it to a pastry bag.
Step 4
Using the prepared ganache, pipe a generous amount onto the bottom of one shortbread cookie and top with another to make a sandwich.
Repeat this process for all cookies. For the best results, refrigerate the completed cookies for 2 hours to allow the ganache to set properly.
