Instructions
Step 1
In a large bowl, combine the eggs with 6 tablespoons of flour, your choice of sweetener, and a pinch of salt. Mix well until smooth.
Gradually pour in the milk while continuously whisking to ensure a creamy texture. Sift in the remaining flour and add the oil. Mix everything together until you achieve a smooth batter.
Divide the batter into two equal parts. One part will be used for savory pancakes, while the other will be split into two sections. In one of the sections, add 1 tablespoon of poppy seeds, and in the other 3-4 tablespoons of cocoa powder for a chocolatey flavor.
Step 2
Heat a lightly oiled frying pan over medium heat. Use a ladle to pour a portion of the batter onto the pan, cooking until bubbles start to form on the surface. Flip the pancake and cook until golden brown on the other side.
Repeat this process for all the batter, ensuring each pancake is cooked to perfection. Set aside the cooked pancakes on a plate.
Step 3
For the meat filling, in a pan, cook the ground meat together with the diced onion and your choice of spices over medium heat. Cook until the meat is browned and fully cooked.
Once cooked, transfer the mixture to a blender and pulse until it reaches a smooth consistency.
For the ham and cheese filling, grate 150 grams of ham and 150 grams of cheese. Combine them in a bowl and set aside.
For the cherry and cottage cheese filling, mix 280 grams of cottage cheese with 100 grams of frozen cherries and add sweetener to taste.
For the chocolate filling, combine 280 grams of cottage cheese with half a chocolate bar and sweetener if desired.
Step 4
Take one pancake and place a generous amount of your chosen filling in the center. Carefully fold or roll up the pancake to encase the filling.
Repeat this process for the remaining pancakes, using a variety of fillings as desired.
Step 5
To store the pancakes, either vacuum seal them or place them in freezer bags. They can then be stored in the freezer for future use.
Enjoy your delicious pancakes whenever you need a quick meal or a treat for unexpected guests!
Servings
Once your crepes are cooked and ready, the fun really begins with delicious fillings! You can go savory or sweet—it's all about what you love. For a simple savory option, try filling them with a mixture of cooked minced meat, onions, and your favorite spices. Don't forget to top it with some fresh herbs! 🌿
If sweet is your forte, how about a classic combination of fresh berries and creamy ricotta? Add a drizzle of honey and you’ve got a dish worth savoring. 🍯✨
For those festive gatherings, serve your crepes stacked high on a platter, garnished with mint leaves and a side of whipped cream for that extra touch! 🎂🍃
Equipment
A good non-stick frying pan is essential for making perfect crepes. Make sure it's well-heated and lightly greased to prevent the crepes from sticking.
A large mixing bowl allows you to mix your batter thoroughly. Choose one that's easy to pour from to reduce mess!
A flexible spatula helps you flip the crepes easily. Make sure it's wide enough to support the crepe during flipping!

Variations
Want to make this recipe fit your dietary needs? Check out these gluten-free and vegan variations! 🌍💚
Gluten-Free: Replace all-purpose flour with a gluten-free flour blend. You may need to adjust the liquid slightly for the right consistency.
Vegan: Substitute the eggs with flax eggs (1 tbsp of flaxseed meal mixed with 2.5 tbsp of water per egg) and use almond or oat milk instead of dairy milk. You can also use coconut oil for greasing the pan!
Faq
- Can I make the crepe batter the night before?
Absolutely! Just store it in the fridge and give it a good mix before cooking in the morning.
- How do I prevent my crepes from tearing?
Make sure your batter is the right consistency—smooth and slightly runny. Also, don’t skip on the rest time; letting it sit for 30 minutes can help!
- What fillings can I use for these crepes?
The possibilities are endless! You can fill them with anything from sautéed vegetables to whipped cream and chocolate. Just let your creativity shine!
- Can I freeze the cooked crepes?
Yes, just make sure to place parchment paper between each crepe before freezing to prevent them from sticking together.
- What should I do if my crepes are too thick?
If they come out too thick, try thinning your batter with a bit more milk until you reach the desired consistency for a lighter crepe.
- How can I make my crepes lighter and fluffier?
For lighter crepes, incorporate some sparkling water into your batter! This adds airiness and keeps them tender.
