Step 1
In a mixing bowl, combine all-purpose flour and powdered sugar. Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs.
Then, add the egg yolk and mix again.
Gradually add cold water, one tablespoon at a time, until the dough comes together. Divide the dough into two balls, flatten, wrap in plastic, and refrigerate for at least 30 minutes.
Step 2
In a saucepan, combine the fresh fruit with granulated sugar, cornstarch, vanilla extract, and lemon juice.
Cook over medium heat, stirring gently, until the mixture bubbles and thickens. Remove from heat and let cool.
Step 3
Preheat the oven to 180°C (350°F). Roll out one ball of dough on a floured surface to fit your pie pan.
Carefully place the rolled dough into the pan and fill it with the cooled filling. Roll out the second ball of dough and cover the pie, then seal and flute the edges.
Step 4
Bake the pie in the preheated oven for about 25-30 minutes or until golden brown.
Once baked, allow it to cool for a bit before slicing. Serve warm or at room temperature for the best flavor!
