Start by washing the fresh strawberries thoroughly. Cut them into quarters and place them in a saucepan.
Add the sugar and water to the saucepan, then heat the mixture over medium heat. Stir gently until the sugar dissolves and the strawberries release their juices.
Bring the mixture to a gentle simmer and let it cook for around 10-15 minutes until it becomes syrupy. Once ready, strain the syrup into a bowl and set it aside to cool.

In a mixing bowl, combine the granulated sugar, corn syrup, and water. Bring this mixture to a boil over medium heat, stirring occasionally.
Meanwhile, in a small saucepan, combine the agar-agar with a little water and bring it to a boil as well. Let it simmer for 5 minutes until fully dissolved.
Once your sugar syrup reaches 120°C (248°F), remove it from the heat and carefully mix in the agar-agar solution. Allow this mixture to cool slightly.
Step 3
Now, take your cooled strawberry syrup and slowly pour it into the sugar mixture while whisking continuously until fully incorporated.
Begin whipping the mixture on high speed until it becomes thick and fluffy, resembling whipped cream. This process may take about 10 minutes.
Transfer the marshmallow mixture to a piping bag and let it cool to room temperature for about 30 minutes.
Step 4
To make the decorations, reserve a portion of the marshmallow mixture and tint it with green and yellow food coloring.
Using a piping bag with a small tip, pipe leaf shapes onto a parchment-lined tray using the colored marshmallow. Allow them to set for about 30 minutes.
Once set, dust everything lightly with powdered sugar to prevent sticking and give a beautiful finish.
