Step 1
Preheat your oven to 120°C (250°F). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk the 4 large egg whites with a pinch of salt until soft peaks form. Gradually add 200 grams (1 cup) of granulated sugar, ensuring that it dissolves completely during whisking.
Once the sugar is fully incorporated, mix in 1 teaspoon of vanilla extract. Continue to whip until the meringue is glossy and stiff peaks form.
Step 2
Spread the meringue evenly onto the prepared baking sheet.
Bake in the preheated oven for about 1 hour until the meringue is dry and easily lifts off the parchment paper. Once baked, turn off the oven and let the meringue cool inside for about 30 minutes.
Step 3
While the meringue cools, wash and slice the 200 grams (7 ounces) of fresh strawberries. In a bowl, combine the strawberries with 100 grams (3.5 ounces) of fresh blueberries and 1 tablespoon of lemon juice. Toss gently to coat the fruits.
Step 4
Once cooled, carefully peel the meringue off the parchment paper and place it on a clean kitchen towel, meringue side down.
Spread the fruit mixture evenly over the meringue, leaving a small border around the edges.
Starting from one edge, gently roll the meringue into a tight log using the towel to help. Once rolled, place it seam-side down on a serving platter.
